Ingredients

1 cup very warm water
1 packet (1/4 oz) active dry yeast
1/2 cup whole-wheat flour
2 cups all-purpose flour
1 tsp salt
1 TBSP olive oil plus a little extra

Directions

1. Mix together the water, yeast and, whole-wheat flour. Let sit for 10 minutes.

2. Stir in the all-purpose flour, salt, and olive oil.

3. Knead the dough with your hands or in a stand mixer with a dough hook until dough is smooth and elastic, about 10 minutes.

4. Lightly oil a large bowl. Form the dough into a ball and roll around in the bowl to cover the ball with oil. Loosely cover the bowl with a towel or plastic wrap and let rise in a warm place for 1 hour.

5. Punch down the dough and separate into 6 equal pieces. Form each piece of dough into a ball. Cover the dough balls with a damp towel or lightly oiled plastic wrap. Let rest 30 minutes.

6. Flatten each dough ball into a 6 to 7 inch circle about 1/4 inch thick.

7. Heat a cast iron pan over medium-high. Lightly brush the hot pan with a little oil.

8. Lay a dough circle on the hot pan and cook until the bottom blisters and dough puffs up a bit, about 3 minutes. Flip over and cook the other side until it blisters, about 2 more minutes, dough should puff up while cooking. Repeat with the remaining dough the allow pitas to cool.

9. When cool enough to handle cut the pitas in half, open them up and stuff with whatever you like.
