Ingredients

1 lb seedless watermelon, cubed
1 cup English cucumber, halved and thinly sliced
1 TBSP mint leaves, thinly sliced
1/4 cup red onion, fine julienne
1/4 cup feta cheese crumbles
1/4 tsp black pepper
1 1/2 tsp white balsamic vinegar
1 TBSP olive oil


Directions

1. Toss all ingredients together.

2. Taste and serve or chill for up to 2 hours.


Notes/Tips

Try adding fresh sliced jalapeno to give it a delicious kick.
