Smoked Mozzarella and Mushroom Pizza

Ingredients

.25oz packet active dry yeast
1 tsp honey
2 tbsp oil
3 cups all purpose flour
1 cup warm water
1 tsp salt
1 cup hot water
4 oz tomato sauce
1 tsp garlic powder
1/2 tsp smoked paprika
12 oz smoked mozzarella cheese shredded
12 oz sliced mushrooms

Directions

1. In a mixing bowl stir together yeast, honey, 1 TBSP oil and water and let sit 5 minutes.

2. Add the flour and 1/2 tsp salt and mix until well combined.

3. Knead dough for about 5 minutes, form into a ball and place in an lightly oiled bowl. Cover and let rest about 30 minutes.

4. Add the other 1 TBSP oil to a pan and saute mushrooms over medium heat until lightly browned, about 5 minutes. Place mushrooms on a paper towel to absorb any excess moisture.

5. Stir in the other 1/2 tsp salt, garlic and paprika into the tomato sauce and set aside.

6. Preheat oven to 450 degrees F.

7. Press dough into a circle on a lightly floured surface. Working from the middle press fingertips out to the edges evenly to form a large circle, about 16 inches in diameter.

8. Place formed dough onto a metal pizza pan. Spread tomato sauce evenly over pizza. Top evenly with the cheese then top with the mushrooms.

9. Bake for 14 to 15 minutes.
