Pear and Baby Spinach Salad with Walnuts and Blue Cheese

Ingredients
2 ripe Bartlett pears, peeled, cored and thinly sliced
2 TBSP olive oil
1 TBSP white balsamic vinegar
dash salt
dash pepper
3 ounces fresh baby spinach
1/2 cup thinly sliced red onion
1/2 cup walnut pieces
1/2 cup crumbled blue cheese
Directions
1. Make the dressing by placing a few slices of pear (equal to about a quarter of one whole pear) into a food processor or blender along with the olive oil, balsamic, salt, and pepper. Blend until smooth and set aside.
2. In a large bowl add the remaining pear slices, spinach, onion, walnut, and blue cheese.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately or cover and refrigerate up to a day.
