4 TBSP butter
1/4 cup onions finely diced
1/4 tsp thyme
1 1/4 cups flour
1 cup cooked chicken diced
1/8 tsp pepper
1 cup chicken broth
1 egg
1 TBSP milk
1 1/2 quarts vegetable oil
1 cup panko bread crumbs
pinch of cayenne pepper
pinch of nutmeg
salt and pepper to taste


1. In a small saucepan add onions and melt butter over medium heat. Add 1/4 cup of the flour, the cayenne and the nutmeg and stir until bubbly and just starting to brown.

2. Whisk in the chicken broth until it starts to thicken and stir in the chicken. Add salt and pepper to taste.

3. Place mixture in a covered bowl and refrigerate for 1 to 2 hours.

4. Place remaining flour into a shallow bowl. Mix the egg and milk in a separate bowl. Place the bread crumbs in a third bowl.

5. Remove the chciken mixture from fridge and form into balls about 2 TBSPs big.

6. Dip the balls into the flour, then the egg mixture, then the bread crumbs, making sure to coat all sides. Place breaded balls in the fridge.

7. In a dutch oven heat the oil to 350 degrees F.

8. Fry the balls until golden brown about 5 minutes.

9. Makes about 15 croquettes.
