Ingredients

2 medium white onions julienned
1 medium red onion julienned
4 medium yellow onions julienned
2 TBSP vegetable oil
2 tsp salt
1/4 tsp thyme
1/2 tsp fresh ground pepper
1/4 tsp kosher salt
1 cup cooking sherry
1/4 ounce pkg unflavored gelatin
1 TBSP worcestershire sauce
3 cups beef broth
3 cups chicken broth
Swiss and parmesan cheese and crostinis(see below) for top

Directions

1. In a dutch oven combine the onions, oil, and salt over medium heat. Cover for 10 minutes without removing lid.

2. Uncover and reduce heat to medium low and simmer about 1 hour stirring every 5 to 10 minutes.

3. Add the thyme, pepper, and kosher salt. Simmer an additional 20 minutes stirring often.

4. Add the sherry. Scrape up any bits off the bottom of the pan and simmer until moisture has evaporated.

5. Sprinkle on gelatin without stirring and allow to dissolve.

6. Stir in the worcestershire, chicken and beef broths and simmer for 30 more minutes.

7. Fill a broiler safe bowl 3/4 of the way with the soup. Top with the croutons and then the swiss, then sprinkle on a little parmesan cheese.

8. Place in broiler until cheese is golden brown about 3 minutes. Makes about 3/4 gallon of soup.

Notes & Tips

Crostini recipe:

1. Freeze a baguette for 20 minutes then slice into 1/4 inch pieces.

2. Lay out bread on a baking sheet and brush tops with oil. sprinkle on salt and pepper. flip and repeat.

3. Bake in a 400 degree F oven for 8 minutes the flip and bake an additional 8 minutes. Let cool.
