Ingredients
- 2 cups cucumber peeled, seeded and chopped into 1 inch cubes
- 1/2 cup grape tomatoes, cut in halves
- 1/2 cup yellow pepper cut in 1 inch slices
- 1/2 cup red onion julienned thinly
- 1/2 cup kalamata olives pitted and halved
- 1/4 cup pepperoncinis sliced
- 1/4 cup feta cheese crumbled
- 1 tsp kosher salt
- 1/4 tsp fresh ground pepper
- 1/4 tsp dill
- 1/2 tsp parsley
- 1/8 tsp oregano
- 1/4 tsp basil
- 1 TBSP red wine vinegar
- 2 TBSP olive oil

Directions
- Mix all ingredients except for the feta cheese in a large bowl.
- Cover and allow to marinate in the refrigerator for at least 1 hour.
- Top with feta cheese and serve.
