Slow Cooker Balsamic Pork Roast

Pork loin seared and slow cooked with white balsamic vinegar results in a tender pork roast with a rich and lightly sweetened sauce.

Slow Cooker Balsamic Pork Roast recipe

Servings: 4 to 6
Total Time: 6 hours 30 minutes

1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cayenne
3 pound pork loin
1 TBSP olive oil
1/2 cup white balsamic vinegar


1. In a small bowl combine the garlic, onion, thyme, salt, pepper, and cayenne.

2. Pat the pork dry with paper towels. Rub the seasoning all over the pork.

3. Heat the oil in a dutch oven or large saute pan over medium-high heat.

4. Sear the pork on all sides, about 3 minutes per side or until well browned.

5. Turn off the stove and transfer the pork to your slow cooker.

6. Carefully pour the balsamic vinegar into the hot pan the pork was seared in and scrape the bottom with a wooden spoon to release and stuck on bits.

7. Pour the contents on the pan into the slow cooker over top of the pork.

8. Cover the slow cooker and cook the pork on low for 6 hours.

Had this dish and it was FABULOUS! I had to substitute the white balsamic vinegar with red and it was a little zesty but man oh man was it good. Not only did we enjoy it the first meal with fluffy mashed potatoes but were able to use it for sandwiches the next couple of days. Nothing beats a cold pork sandwich on fresh bread....I will be making this again.
