Buffalo Chicken Burger

Ground chicken patties slathered in classic Red Hot sauce and topped with a ranch spread.

Buffalo Chicken Burger recipe

1 lb ground chicken
salt & pepper
1 cup oil for frying
1/2 cup Frank's Red Hot Sauce
Burger Buns
Red Onion
Shredded lettuce
For the Flour Coating:
1 cup all-purpose flour
1/2 cup cornstarch
1 1/2 Tbsp salt
1/4 tsp white pepper
1/4 tsp ground pepper
1/4 tsp onion powder
For the Batter:
1/2 cup sparkling water
1 egg
2 Tbsp cornstarch
2 Tbsp all-purpose flour
1/4 tsp onion powder
1/4 tsp black pepper
1/2 tsp salt
For the Ranch Spread:
1/4 cup mayo
1/4 sour cream
1 Tbsp half & half
1/4 tsp parsley
1/4 tsp granulated garlic
1/4 tsp kosher salt
dash oregano
pinch basil
pinch dill
pinch dry mustard
pinch thyme
pinch white pepper
1 heaping tsp green onions, sliced thin
1/4 tsp white vinegar


1. Line a baking sheet with wax paper. Season the ground chicken with salt and pepper then shape into 4 patties about 1/2 inch thick. Freeze until solid, about 2 hours.

2. In the meantime make your Ranch Spread by stirring together all the ingredients in a small bowl. Refrigerate until later.

3. Whisk all ingredients for the Flour Coating in a large bowl.

4. For the Batter, whisk together the Batter ingredients until combined. Set aside.

5. Heat the oil in a 12-inch pan over medium heat until shimmering.

6. Add 2 frozen patties to the flour coating and coat. Then dip each in the batter. Carefully lower each patty into the hot oil. Cook for 5 minutes on one side, then turn and cook another 5 minutes on the second side. Lower heat if needed to prevent burning. Cook thoroughly, until 165 F internal temperature. Remove from pan and drain on a cooling rack or paper towels. Repeat with the remaining 2 patties.

7. Pour the Frank's Red Hot into a shallow dish and dip each patty into the sauce to cover completely and place on buns.

8. Serve with the Ranch spread, onions, pickles, lettuce, and anything else you like.


After dredging the patties in the batter try dipping in the flour mixture again before frying. This will give a crisper texture and may prevent sticking to the bottom of your skillet.
