Make Ahead Pork Tenderloin

Ingredients
1 pork tenderloin, trimmed
2 TBSP oil, separated
salt & pepper
2 TBSP Ancho Powder or your favorite spice rub, optional
Directions
1. Heat the oven to 350 degrees F.
2. Dry the tenderloin and brush with 1 TBSP oil, sprinkle with salt and pepper.
3. Roll the pork in foil and twist the ends of foil on both sides to create a solid cylinder shape all the same width.
4. Bake for 30 minutes or until 140 degrees F internal temperature.
5. Remove the pork from the oven and either move on to step 6 or refrigerate overnight.
6. Unwrap the pork from the foil and roll in the ancho powder if using.
7. Heat a skillet with oil and sear the pork on all sides.
8. Slice the tenderloin and serve.

Notes/Tips
Try any spice rub you like: Italian herbs, coffee, black pepper, Cajun spice, or even lemon pepper. Just match the flavors to complement your sides.
