1 pound ground beef
2 medium yellow onions, thinly sliced
6 slices sourdough bread
6 slices Swiss cheese (about 1/2 pound)
6 TBSP unsalted butter, divided
salt & pepper


1. Melt 2 TBSP of the butter to a non-stick skillet over medium heat. When butter starts to foam add the onions and 1/4 tsp salt. Cook, stirring often, until onions become dark brown, about 20 minutes. Transfer onions to a plate and set aside.

2. Form the ground beef into 4 patties, about the same size and shape of your bread slices. Generously season both sides of the patties with salt and pepper.

3. Heat a griddle (or a large non-stick skillet) over medium heat. Melt 2 TBSP of butter on the griddle (or skillet) and cook your beef patties on both sides until well browned and cooked to desired doneness, 4 to 6 minutes per side.

4. Assemble sandwiches as follows: slice of bread - slice of Swiss - beef patty - onions - slice of Swiss - slice of bread.

5. Add the remaining 2 TBSP of butter on the griddle (or skillet) and cook the sandwiches until the slices of bread on each end are lightly toasted and cheese is melted.

6. Transfer the sandwiches to a cutting board. Slice the sandwiches in half and serve.
