1 TBSP olive oil
1 large yellow onion, diced
salt & pepper
2 medium garlic cloves, minced
1 tsp dried oregano
1 cup vegetable broth
1 1/4 cups water
1 cup long-grain brown rice, rinsed
2 roasted red peppers, patted dry and chopped
1/2 cup crumbled feta cheese
lemon wedges


1. Heat the oil in a dutch oven over medium-high heat.

2. Add the onion and 1/2 tsp salt, cook stirring occasionally, until onion is softened and lightly browned, about 7 minutes.

3. Stir in the garlic and oregano, cook until fragrant, about 10 seconds.

4. Add the vegetable broth and water. Scrape the bottom of the pan with a wooden spoon to release any stuck on bits and bring to a boil.

5. Stir in the rice, cover the pot and reduce heat to low.

6. Simmer on low for 45 minutes. DO NOT REMOVE THE LID!

7. Take off the heat and let sit for 15 minutes. ONCE AGAIN DO NOT REMOVE THE LID!

8. Now remove the lid and add the roasted red peppers and feta. Fluff with a fork to combine.

9. Add salt & pepper to taste and serve with lemon wedges.
