Esfihas (Brazilian Meat Pies)

The Brazilian form of sfiha (a small meat pie/pizza from The Levant). Esfihas are a popular street food in Brazil served either open-faced or folded in triangles.

Ingredients

DOUGH:
1 cup warm whole milk
1 packet (1/4 ounce) active dry yeast
3 cups all-purpose flour
1 TBSP olive oil plus a little extra
1 tsp salt
FILLING:
1 pound ground beef
1 medium onion, diced
1 medium red bell pepper, diced
2 TBSP freshly squeezed lime juice (about 1 medium lime)
2 tsp dried parsley
1 tsp salt
1/2 tsp black pepper

Directions

DOUGH:

1. In a large mixing bowl combine the milk and yeast. Stir in the flour and oil then stir in the salt. Continue stirring until a dough forms and it pulls away from the side of the bowl.

2. Transfer the dough to a lightly floured work surface and knead until dough is elastic and can be formed into a smooth ball, about 5 minutes.

3. Lightly oil a separate large bowl and place the dough ball inside, roll the dough around to cover in the oil. Loosely cover the bowl and set in a warm place to rise, about 1 hour.

FILLING:

1. Add the ground beef, onion, and bell pepper to a saute pan over medium heat. Cook while breaking up the beef until no longer pink and veggies are softened, about 12 minutes.

2. Drain any grease from the beef mixture and transfer to a large bowl. Stir the lime juice, parsley, salt, and pepper in with the beef mixture and set aside.

ASSEMBLY:

1. Preheat the oven to 425°F and lightly oil a baking sheet.

2. On a lightly floured surface punch down the dough and separate into 8 equal pieces. Roll each piece of dough into a ball then flatten into circle 4 to 5 inches in diameter. Using your fingers press in the center and raise the edges up (making little bowl shapes) .

3. Fill the dough bowls equally with the beef filling while lightly pressing the beef into the dough.

3. Bake in the preheated oven until crusts are golden brown, 18 to 20 minutes.
