Zucchini Parmesan Bites

Ingredients
1 lb (2 small) zucchini, sliced 1/2 inch thick
sprinkle kosher salt
sprinkle black pepper
1/2 cup mayonnaise
1 tsp basil, chopped
2 tsp lemon zest
2 tsp lemon juice
1/2 oz Parmesan cheese, finely shredded
2 TBSP breadcrumbs
Directions
1. Preheat the oven to 450 degrees F.
2. Sprinkle both sides of the zucchini slices with salt and pepper.
3. In a small bowl mix the mayonnaise, lemon zest, and lemon juice together.
4. Using a small spoon dab a pool of the mayo mixture onto the top of each zucchini slice.
5. Sprinkle with Parmesan cheese and breadcrumbs.
6. Place on a baking rack set over a baking sheet.
7. Bake for 20-25 minutes until the tops are browned and crispy.
