Pork and Rice Noodles with Sriracha-Hoisin Sauce

Ingredients
2 TBSP peanut oil
8 ounces flat rice noodles
1 pound pork tenderloin, sliced into thin pieces
1 large bell pepper, cut into small thin strips
2 medium garlic cloves, minced
5 green onions, thinly sliced
1/4 cup chopped cashews
1/4 cup freshly chopped cilantro
SRIRACHA-HOISIN SAUCE:
3 TBSP cup soy sauce
2 TBSP natural peanut butter
1 TBSP honey
2 tsp rice vinegar
2 tsp sesame oil
1 medium garlic clove, minced
1 TBSP Sriracha sauce
Directions
1. Add all the SRIRACHA-HOISIN SAUCE ingredients together in a bowl, mix until smooth and set aside.
2. Soak or cook your noodles according to package directions, drain and set aside.
3. Heat the oil in a wok or large non-stick pan over medium-high heat.
4. Add the sliced pork to the pan and cook until just browned, about 3 minutes. Transfer pork to a plate and set aside.
5. Add the bell pepper to the pan and stir fry for 2 minutes. Add the garlic to the pan and cook until fragrant, about 10 seconds.
6. Return the pork to the pan along with the rice noodles and hoisin sauce. Toss to combine and cook until heated through, about 1 minute.
