Quick Chicken Cheesesteaks

Ingredients
1 TBSP olive oil
1 medium yellow onion, diced
2 medium bell peppers, diced
1 pound boneless skinless chicken breasts, sliced thin (about 1/8 inch)
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp dried parsley
salt & pepper
6 ounces Monterey Jack cheese, shredded
4 6-inch sub rolls, warmed or toasted
optional toppings: mayo, pickles, shredded lettuce, tomatoes
Directions
1. Heat the oil in a wok or large nonstick skillet over medium-high heat.
2. Add the onion and peppers to the pan. Cook, stirring occasionally, until softened, about 5 minutes.
3. Add the chicken, oregano, garlic, parsley, 1 tsp salt, and 1/2 tsp pepper to the pan. Cook, stirring occasionally, until chicken is cooked through, about 5 more minutes. If necessary season with extra salt and pepper to your tastes.
4. Take off the heat and top with the shredded Monterey Jack cheese. Cover the pan until cheese is melted.
5. Scoop the chicken mixture into your sub rolls and add the toppings of your choice.
