Ingredients

  • 4 TBSP unsalted butter
  • 4 medium garlic cloves, chopped
  • 1 medium carrot, chopped
  • 1 rib of celery, chopped
  • 1 small yellow onion, chopped
  • 1/2 cup all-purpose flour
  • 6 cups chicken broth
  • dash of dried thyme
  • 1 bay leaf
  • dash of white pepper
  • 1 cup chopped ham
  • 1 pound Yukon gold potatoes, cut into 1/2-inch pieces

Directions

  1. Melt the butter in a dutch oven over medium heat then add the garlic, carrots, celery and onion. Saute for 2 to 3 minutes.

  2. Add the flour and cook, while stirring constantly, for about 5 minutes.

  3. Add the chicken broth, thyme, bay leaf and pepper. Stir and cook until it begins to boil.

  4. Add the ham and potatoes then reduce the heat to low and simmer until the liquid thickens and potatoes are tender, stirring often, about 45 minutes.
