Garlic and White Cheddar Mashed Potatoes

Ingredients

  • 2 pounds russet potatoes, peeled and cut into 1/2-inch pieces
  • salt & freshly ground black pepper
  • 4 TBSP unsalted butter
  • 3 medium garlic cloves, peeled and minced
  • 3/4 cup whole milk
  • 6 ounces sharp white cheddar cheese, shredded

Directions

  1. Add the potatoes and 1 tsp salt to a large pot then cover completely with plenty of water and bring to a boil over medium-high heat.

  2. When the water begins boiling reduce the heat to medium and simmer the potatoes until tender, 10 to 15 minutes.

  3. Drain the potatoes and set aside.

  4. Place the empty pot back on the stove over low heat then melt the butter in the pot with the garlic.

  5. When the butter has melted stir in the milk and cook, stirring occasionally, until the milk has warmed, about 2 minutes.

  6. Add the cooked potatoes to the pot then use a potato masher to mash the potatoes until smooth.

  7. Stir in the shredded cheese until melted through then taste the potatoes and season with salt & pepper to taste.
