INGREDIENTS
1 pound penne pasta
1 pound boneless skinless chicken breast cut into bite size pieces
salt & pepper
1 TBSP plus 1 TBSP unsalted butter
1 medium yellow onion, diced
1 medium green bell pepper, diced
1 rib of celery, diced
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp cayenne pepper
1 cup heavy cream
1 bunch green onions, thinly sliced

DIRECTIONS
Cook the pasta according to package directions, drain then set aside.
Generously season the chicken pieces with salt & pepper then set aside.
Melt 1 TBSP of the butter in a dutch oven over medium heat.
Add the chicken and cook, stirring occasionally, until cooked through, about 7 minutes then transfer the chicken to a plate and set aside.
Melt the remaining 1 TBSP of butter in the now empty dutch oven over medium heat.
Add the onion, bell pepper, and celery to the dutch oven and cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
Stir in the garlic powder, paprika, onion powder, oregano, thyme, cayenne, and 1/2 tsp salt until well combined.
Pour in the heavy cream and bring to a slight boil then reduce heat to medium-low and simmer, stirring occasionally, for about 2 minutes.
Take the dutch oven off the heat and gently stir in the cooked chicken and cooked pasta until well combined.
Season with salt and pepper to taste and serve topped with the sliced green onion.
