Bobotie
A South African curry flavored beef casserole with a creamy egg topping.

Ingredients
- 1 tsp olive oil
- 1 cup breadcrumbs
- 1/2 cup whole milk
- 1 TBSP unsalted butter
- 1 large yellow onion, diced
- 1 mango peeled, pitted, and diced
- 1 tsp ground cumin
- 1/2 tsp ground ginger
- 1/2 tsp garlic powder
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- salt & pepper
- 2 pounds ground beef
- zest and juice from 1/2 lemon
- TOPPING:
- 2 large eggs
- 1/2 cup whole milk

- Preheat the oven to 350°F. Oil the inside bottom and sides of an 8x8-inch (1 1/2 to 2 quart) baking dish with the 1 tsp olive oil and set aside.
- Mix the breadcrumbs and milk together in a large mixing bowl and set aside.
- Melt the butter in a saute pan over medium-high heat. When the butter is melted add the diced onion and cook, stirring occasionally, about 5 minutes.
- Add the mango, cumin, ginger, garlic, turmeric, cinnamon, coriander, cayenne, 1 tsp salt, and 1/4 tsp pepper to the pan and stir to combine.
- Add the ground beef to the pan and cook while breaking up the beef with a spatula until the beef is no longer pink, about 10 minutes.
- Take the pan off the heat and stir the milk and breadcrumbs in with the beef mixture. Add the lemon zest and juice and stir everything together until well combined. Taste the beef mixture and season with additional salt if necessary.
- Transfer the beef mixture to the oiled baking dish. Spread the beef mixture out evenly then press down flat with a spatula to compact the beef into the baking dish as best as you can.
- Beat the eggs with the 1/2 cup whole milk then pour evenly over the beef mixture.
- Bake in the preheated oven until the topping is set and lightly browned, about 45 minutes.
