Preheat the oven to 400°F.
Cook the egg noodles according to package directions then drain and set aside.
Heat the oil in a large saute pan over medium-high heat.
Add the ground beef to the pan and cook, while breaking up the beef, until well browned, about 6 minutes.
Stir in the onion, tomatoes, soy sauce, garlic, salt, and pepper and cook, stirring occasionally, for about 10 more minutes.
Take the pan off the heat then stir in the cooked egg noodles.
Spread the contents of the pan evenly into a 9x13-inch baking dish.
Sprinkle the shredded cheese evenly on top then bake in the preheated oven until cheese is fully melted, about 10 minutes.
