A whole chicken rubbed with garlic and olive oil butter mixture then oven roasted in a cast-iron skillet, resulting in a crispy skin and rich and moist inside.
Place a large cast-iron skillet into the oven then preheat the oven to 475°F.
In a small bowl mix together the softened butter, olive oil, garlic, salt, and pepper.
Remove and discard any giblets from the chicken cavity then pat the chicken dry with paper towels.
Rub the garlic butter mixture all over the outside of the chicken as well as under the skin as best as you can.
Truss the chicken using kitchen twine.
When the oven has preheated and the cast-iron skillet is hot, take the skillet out of the oven then carefully place the chicken, breast-side up, into the skillet.
Place the skillet back in the oven and roast the chicken for 10 minutes.
Reduce the heat to 350°F and continue to roast the chicken until cooked through, about 1 hour.
Take the chicken out of the oven and allow to rest for at least 15 minutes before slicing and serving.
