INGREDIENTS
SALAD:
8 ounces whole grain rotini pasta
1 pound lean ground beef
salt & freshly ground black pepper
8 ounces sharp cheddar cheese, small cubed
1 cup chopped dill pickles
1 cup sliced cherry tomatoes
1/3 cup diced red onion
DRESSING:
1/4 cup olive oil
2 TBSP white balsamic dressing
1 TBSP prepared yellow mustard
1/4 tsp salt
1/8 tsp black pepper

DIRECTIONS
Cook the pasta according to package directions.
Drain the pasta and rinse under cold water then put the pasta in a large mixing bowl and set aside.
Add the ground beef to a skillet over medium-high heat and season the beef with 1 tsp salt and 1/4 tsp black pepper.
Cook the beef, breaking it up as it cooks, until well browned and cooked through, 8 to 10 minutes.
Drain the beef of any excess grease then add it to the bowl with the cooked pasta.
Add the cheddar, pickles, tomatoes, and onion to the bowl and gently mix in with the beef and pasta.
In a separate bowl, whisk together the dressing ingredients (olive oil, vinegar, Dijon, salt, and pepper) until well combined.
Pour the dressing into the bowl with the pasta salad then gently toss to combine.
Season the pasta salad with salt and pepper to taste then cover and refrigerate for at least 1 hour.
