INGREDIENTS
1 medium head cauliflower
1 medium head broccoli
3 TBSP olive oil
1 medium yellow onion, chopped
3 medium garlic cloves, chopped
3 TBSP all-purpose flour
8 cups water
salt & freshly ground black pepper
6 ounces sharp cheddar cheese, shredded
optional: croutons and/or shredded cheese for topping

DIRECTIONS
Cut the cauliflower into small florets and set aside.
Cut the broccoli into small florets and roughly chop any large stalks into small pieces then set the cut broccoli to the side with the cauliflower.
Heat the oil in a dutch oven or large pot over medium-high heat.
Add the cauliflower, broccoli, onion, and garlic to the pot and cook, stirring often, for about 2 minutes.
Stir in the flour until well combined.
Stir in the water, 2 tsp salt, and 1/4 tsp black pepper and bring to a boil.
Reduce heat to medium-low and simmer until the broccoli and cauliflower are tender, about 20 minutes.
Take the soup off the heat then use an immersion blender, or a stand blender in batches, and puree the soup until smooth.
Return the soup to the stovetop and cook over medium heat, stirring occasionally, until the soup has thickened a bit, 10 to 15 more minutes.
Take the soup off the stove then sir in the cheese a little at a time until melted and blended into the soup.
Taste and season the soup with additional salt & pepper if needed.
