INGREDIENTS

  • MEATBALLS:
  • 1 pound ground turkey
  • 1/2 cup dried breadcrumbs
  • 1 large egg, lightly beaten
  • 3/4 cup freshly grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • 2 tsp garlic powder
  • 1/2 tsp salt
  • SOUP:
  • 1 TBSP olive oil
  • 1 pound roma tomatoes, diced
  • 1 large yellow onion, small chopped
  • 2 medium carrots, small chopped
  • 1 rib of celery, small chopped
  • 3 medium garlic cloves, minced
  • 4 cups water
  • 1 tsp dried thyme
  • 2 bay leaves
  • salt & freshly ground black pepper
  • 15-ounce can cannellini beans, drained and rinsed
  • 1 cup uncooked elbow macaroni
  • 5 ounces baby spinach, chopped



DIRECTIONS

  1. Preheat the oven to 425°F.
  2. Use your hands to combine all the meatball ingredients (turkey, breadcrumbs, egg, Parmesan, oregano, basil, parsley, garlic, salt) together in a large bowl.
  3. Roll the mixture into 1-inch balls then place on a baking sheet.
  4. Bake the meatballs in the preheated oven for 12 minutes.
  5. Take the meatballs out of the oven and set aside while you make the soup.
  6. Heat the olive oil over medium-high heat in a dutch oven or large pot.
  7. Add the tomatoes, onion, carrot, celery, and garlic to the pot and cook, stirring occasionally, until they begin to soften, about 5 minutes.
  8. Stir in the water, thyme, bay leaves, 1 tsp salt, and 1/2 tsp black pepper then bring to a boil.
  9. Stir in the beans and macaroni and cook until the pasta is tender, about 8 minutes.
  10. Stir in the meatballs and spinach then reduce the heat to medium-low and simmer, stirring occasionally, for about 3 more minutes.
  11. Season the soup with salt & pepper to taste.
