INGREDIENTS
1 pound ground pork
1 large yellow onion, diced
3 pounds roma tomatoes, chopped
5 TBSP paprika
2 TBSP ground cumin
2 TBSP garlic powder
1 tsp dried oregano
1/2 tsp cayenne pepper
salt & freshly ground black pepper
2 cups water
8 ounces dried pinto beans, thoroughly rinsed
OPTIONAL TOPPINGS:
shredded cheddar cheese
diced onion
sliced jalapeno
sour cream
tortilla chips

DIRECTIONS
Add the ground pork to a large pot over medium-high heat and cook, while breaking up the pork, until browned, about 5 minutes.
Stir the onion and tomato in with the pork and continue to cook, occasionally stirring and breaking up the tomatoes, about 5 minutes.
Pour the water into the pot and use a wooden spoon to scrape the bottom of the pot to release any loose bits stuck to the bottom.
Stir in the paprika, cumin, garlic, oregano, cayenne, 2 tsp salt, and 1/2 tsp black pepper until combined.
Transfer the contents of the pot to a large slow cooker.
Stir in the pinto beans then cover the slow cooker and cook on LOW until beans are tender, about 7 hours.
Season with salt & pepper to taste.
