Irish Parsnip & Carrot Mash

INGREDIENTS

1 pound parsnips, peeled and cut in 1/2-inch thick slices
12 ounces carrots, peeled and cut in 1/2-inch thick slices
4 TBSP unsalted butter
salt & freshly ground black pepper
1 tsp dried parsley

DIRECTIONS

Place sliced parsnips and carrots in a large pot with about 3 quarts of water and 1 tsp of salt.
Bring to a boil over high heat.
When the water begins to boil, reduce the heat to medium and cook until the veggies are tender, about 20 to 25 minutes.
Drain the vegetables and place in a large bowl with the butter, 1/2 tsp salt and 1/4 tsp black pepper.
Use a potato masher to mash well.
Season with additional salt and pepper to taste.
Garnish with parsley.
