DIRECTIONS
DOUGH:
Stir together the warm water and yeast in a large mixing bowl.
Stir in the flour, salt, and 1 TBSP of olive oil until well combined then stir until a dough is formed and pulls away from the sides of the bowl.
Knead the dough by hand for about 10 minutes or until the dough is smooth and elastic.
Form the dough into a ball and drizzle 1 tsp of oil over top then flip the dough ball around a few times to cover in oil.
Loosely cover the bowl and set in a warm place to rise until doubled in size, about 1 hour.
TOPPINGS AND ASSEMBLY:
Season the chicken generously with salt & pepper.
Add the butter and 1/4 cup of the hot sauce to a skillet over medium heat.
When the butter has melted add the chicken breast to the skillet then cover the pan and cook the chicken for about 5 minutes.
Flip the chicken over and continue to cook, covered, for about 5 more minutes or until the chicken is cooked through.
Transfer the chicken breast to a cutting board and set aside.
Preheat the oven to 450°F and lightly oil a large pizza pan or 13x18-inch baking sheet.
Stretch or roll out the dough to fit your pan.
Brush the remaining 1/4 cup of hot sauce onto the dough then sprinkle the Monterey Jack cheese evenly on top.
Cut the chicken breast into thin slices then spread out the chicken slices on top of the cheese.
Sprinkle on the red onion then bake in the preheated oven for 14 to 17 minutes or until the crust is lightly browned.
