DIRECTIONS
DOUGH:
In a large mixing bowl stir together the warm water and yeast.
Stir in the flours and salt then use your hands to knead the dough for about 10 minutes or until the dough is smooth and elastic.
Form the dough into a ball then drizzle the oil over the dough and flip the dough around to coat in the oil.
Loosely cover the bowl and set aside in a warm place to rise for 1 hour.
BUFFALO SAUCE:
In a small saucepan whisk together the vinegar, cayenne, garlic, onion, and salt over medium heat and simmer, stirring often, for about 3 minutes.
Whisk in the butter until melted and thoroughly combined.
Reduce the heat to medium-low and continue to simmer the sauce, stirring often, about 3 more minutes.
Take the pan off the heat and set aside.
TOPPINGS AND ASSEMBLY:
Heat the oil in a medium-size saucepan over medium-high heat.
Season the chicken all over with the salt and garlic then sear the chicken in the hot oil for about 3 minutes per side.
Pour the water into the pan and bring to a boil.
Reduce the heat to medium-low then place a lid on the pan and simmer the chicken until cooked through, 10 to 15 minutes.
Transfer the chicken to a plate then use two forks to shred the chicken.
Put the shredded chicken into a large bowl with the buffalo sauce and toss to coat then set aside.
Preheat the oven to 450°F and lightly oil a large pizza pan or 13x18-inch baking sheet.
Stretch the dough out to fit onto your pizza pan then spread the chicken and buffalo sauce mixture evenly on top.
Now sprinkle on the mozzarella followed by the feta cheese.
Bake in the preheated oven until the crust is lightly browned, about 15 minutes.
