Roasted Tandoori Style Chicken Thighs
Chicken thighs marinated in a seasoned yogurt mixture then roasted and broiled in the oven.

Ingredients
- 1 cup plain Greek yogurt
- 1 TBSP fresh lemon juice
- 1 TBSP ground coriander
- 1 tsp salt
- 1 tsp ground cumin
- 1/2 tsp ground ginger
- 1/2 tsp freshly ground black pepper
- 1/4 tsp cayenne pepper
- 2 pounds bone-in skin-on chicken thighs
Directions
- In a large bowl mix together the yogurt, lemon juice, coriander, salt, cumin, ginger, cayenne, salt, and black pepper until well combined.
- Place the chicken thighs in the bowl then flip the chicken around to coat in the yogurt mixture.
- Cover the bowl and refrigerate for 1 hour.
- Take the chicken out of the refrigerator then preheat the oven to 425°F.
- Line a large rimmed baking sheet with parchment paper then spread the chicken thighs out on the baking sheet skin-side up.
- Place the baking sheet on the top shelf of the preheated oven and bake the chicken until cooked through, about 35 minutes.
- Turn the oven to broil then broil the chicken thighs for about 2 minutes or until the skin on the chicken begins charring.
