Elbow pasta combined with onion, celery, dill pickle, mayo, and a touch of Dijon mustard then served cold.

INGREDIENTS

  • 8 ounces uncooked elbow pasta
  • salt & pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup diced dill pickle
  • 1 TBSP Dijon mustard
  • 1/2 cup mayonnaise



DIRECTIONS

  1. Cook pasta according to package directions. Drain pasta and rinse under cold water.
  2. Add the cooked pasta, 1/2 tsp salt, 1/4 tsp pepper, and the remaining ingredients to a large bowl. Mix until thoroughly combined. Taste and season with additional salt & pepper if neccessary.
  3. Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
