INGREDIENTS
1 tsp olive oil
1 leek, sliced and chopped (white and pale green parts only)
5 cups water
2 13-ounce bags (about 5 cups) frozen sweet garden peas
salt & freshly ground black pepper
1 TBSP fresh lemon juice
sour cream for garnish

DIRECTIONS
Heat the oil in a large pot over medium-high heat.
Add the leeks to the pot and cook, stirring occasionally, until softened, about 2 minutes.
Stir in the water then bring to a boil.
Stir in the peas, 1 tsp salt, and 1/4 tsp black pepper then return to a boil.
Reduce the heat to medium and simmer for about 5 more minutes.
Take the pot off the heat then use an immersion blender, or a stand blender in batches, to puree the soup until smooth.
Stir in the lemon juice then season with salt and pepper to taste.
Ladle soup into bowls and garnish with sour cream.
