Apple Cinnamon Ebleskivers

Ingredients
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
3/4 cup whole milk
1 large egg
about 1 tsp peanut oil
FILLING:
1/2 medium apple, peeled and diced
2 TBSP unsalted butter, softened
1 TBSP raw honey
1/2 tsp ground cinnamon
Directions
1. Thoroughly mix the flours, baking powder, cinnamon, salt, milk, and egg together in a large measuring cup (or a container that's easy to pour from) until well combined and there are no lumps of flour.
2. Make the filling: In a small bowl mix together the apple, butter, honey, and cinnamon until well combined.
3. Lightly oil each well of your Ebleskiver Pan with just a couple drops of peanut oil. Heat the Ebleskiver Pan on the stove over medium-high heat.
4. When the pan is hot pour batter into the wells about half-way up. Drop about 1 tsp of the apple mixture in the center of each well then top it off with a little more batter. Cook until well browned on the bottom, 2 to 3 minutes. Use a wooden skewer to push and flip the ebelskivers over. Cook until the other side is browned, 2 to 3 more minutes.
5. Transfer the cooked ebelskivers to a plate and repeat the cooking process with the remaining batter. Makes about 14 ebelskivers.
