A simple Italian salad made up of baby arugula, toasted pine nuts, Parmesan, olive oil, lemon juice, salt & pepper.

- 1/4 cup pine nuts
- 5 ounces fresh baby arugula
- 1 TBSP fresh lemon juice
- 2 TBSP olive oil
- 1/4 cup freshly grated Parmesan cheese

Directions
- Place the pine nuts in a skillet over medium heat and cook, stirring often, until lightly browned, 2 to 3 minutes.
- Place the toasted pine nuts in a large bowl. Add the arugula, lemon juice, and olive oil and toss to combine.
- Sprinkle the Parmesan on top then season with salt & freshly ground black pepper to taste.
