1/4 cup loose mint leaves (chop a bit if they are large)
1/4 cup coarsely chopped basil leaves
1/2 cup feta cheese crumbles
DIRECTIONS
In a bowl whisk together the oil, vinegar, honey, Dijon, salt, and pepper, remove one tablespoon of this mixture and place in a second bowl. Add the arugula to the remaining dressing and toss together.
In the second bowl toss together nectarines, cucumbers, mint, basil.
Place the arugula in a serving bowl and top with the nectarine mixture.
