Asian Chicken Lettuce Wraps

Ingredients
1 TBSP olive oil
1 lb ground chicken
2 cloves of garlic, minced
1 medium size yellow onion, diced
1 bell pepper, diced
1 celery rib, diced
1/4 cup soy sauce
1 TBSP rice vinegar
1 TBSP freshly grated ginger
2 TBSP Sriracha
4 green onions, thinly sliced
salt & pepper
1 head iceberg or butter lettuce
Directions
1. Heat the oil in a saucepan over medium-high heat. Cook the ground chicken while breaking it up until cooked through about 3 to 4 minutes.
2. Stir in the garlic, onion, bell pepper, celery, soy sauce, rice vinegar, ginger and Sriracha and cook, stirring occasionally, about 3 minutes.
3. Stir in the green onions and cook 1 more minute, add salt and pepper to taste.
4. Spoon the chicken mixture on the center of lettuce leaves and eat like a taco.
