Mix the marinade ingredients together in a large bowl. Add the pork pieces and toss to coat, set aside and to marinate, about 20 minutes.
Heat the cooking oil in a wok or large skillet over medium-high heat until it begins to smoke. Add the pork and cook, stirring occasionally, until no longer pink, about 4 minutes.
Add the ginger and stir for about 15 seconds. Add the cashews and chili garlic sauce and stir for about 15 more seconds.
Add the soy sauce, water, honey and green onions and cook while stirring until pork is cooked through, around 2 to 3 minutes.
