Asian Chili Pork with Cashews
A quick, easy, delicious and spicy Asian pork dish with cashews and green onion.

Ingredients
- 1 1/2 lbs pork loin cut into bite size pieces
- 1 cup lightly salted cashews
- 3 TBSP cooking oil
- 2 tsp freshly minced ginger
- 1/4 cup chili garlic sauce
- 1 TBSP soy sauce
- 1 TBSP water
- 1 TBSP honey
- 1 cup thin sliced green onion
- 3 cups cooked rice (1 cup uncooked rice)
- marinade:
- 2 TBSP soy sauce
- 2 TBSP dry sherry or rice wine
- 1 TBSP sesame oil
- 1 TBSP cornstarch

Directions
- Mix the marinade ingredients together in a large bowl. Add the pork pieces and toss to coat, set aside and to marinate, about 20 minutes.
- Heat the cooking oil in a wok or large skillet over medium-high heat until it begins to smoke. Add the pork and cook, stirring occasionally, until no longer pink, about 4 minutes.
- Add the ginger and stir for about 15 seconds. Add the cashews and chili garlic sauce and stir for about 15 more seconds.
- Add the soy sauce, water, honey and green onions and cook while stirring until pork is cooked through, around 2 to 3 minutes.
- Serve over cooked rice.
