Avocado Hummus

A creamy homemade hummus blended with fresh avocado, cumin, and lime juice then sprinkled with a touch of cayenne pepper for some heat.

INGREDIENTS

  • 3/4 cup dried chickpeas (garbanzo beans), rinsed
  • 1/2 tsp baking soda
  • 2 medium garlic cloves, peeled
  • 1 TBSP fresh lime juice
  • 1 TBSP tahini
  • 1/2 tsp ground cumin
  • salt & freshly ground black pepper
  • 2 medium avocados, pitted and peeled and chopped
  • 1 ice cube
  • 1 TBSP olive oil
  • 1/8 tsp cayenne pepper
  • raw vegetables, breads, or tortilla chips for serving



DIRECTIONS

  1. Stir together the chickpeas, baking soda, and about 6 cups of water in a large saucepan over medium-high heat and bring to a boil.
  2. Place a lid on the pan and reduce the heat to medium-low then simmer the chickpeas over medium-low until the chickpeas are very tender, about 1 hour.
  3. Drain the chickpeas.
  4. Put the drained chickpeas into a food processor along with the garlic, lime juice, tahini, cumin, 3/4 tsp salt, 1/4 tsp black pepper, avocado, and the ice cube then blend until smooth.
  5. Taste the hummus and season with additional salt & pepper if needed.
  6. Transfer the hummus to a serving bowl then drizzle with olive oil and sprinkle on the cayenne pepper.
