INGREDIENTS
1 pound beef chuck roast, cut into bite-size pieces
2 TBSP olive oil
1 medium yellow onion, diced
2 ribs of celery, diced
1 medium carrot, diced
8 ounces white button mushrooms, sliced
3 medium garlic cloves, minced
8 cups water
2 TBSP soy sauce
1 cup wild rice
salt & freshly ground black pepper

DIRECTIONS
Generously season the beef pieces all over with salt and pepper.
Heat the oil in a dutch oven or large pot over medium-high heat and brown the beef on all sides, about 6 minutes total.
Add the onion, celery, carrots, mushrooms, and garlic and cook, stirring occasionally, for about 5 minutes.
Stir in the water and soy sauce then use a wooden spoon to scrape the bottom of the pot to release any stuck on bits.
Stir in the wild rice and bring to a boil.
Cover the pot then reduce the heat to medium-low and simmer, stirring occasionally, until rice is cooked and beef is tender, about 1 hour.
Taste and season with additional salt & pepper, if needed.
