A Greek inspired pasta salad made with rotini pasta, fresh broccoli florets, red pepper, kalamata olives, and feta cheese tossed in a lemon vinaigrette dressing.

INGREDIENTS

1 pound rotini pasta
4 cups small fresh broccoli florets, uncooked
1 red bell pepper, chopped
1 cup kalamata olives, pitted and sliced
6 ounces feta cheese crumbled
salt & freshly ground black pepper
LEMON VINAIGRETTE
3 TBSP fresh lemon juice
1/4 cup olive oil
1 tsp Dijon mustard
1 medium garlic clove, minced
1/4 tsp salt
1/8 tsp freshly ground black pepper

DIRECTIONS

Cook the pasta according to package directions then drain and rinse under cold water.
Add the pasta to a large mixing bowl then add the broccoli, red pepper, olives, and feta.
Whisk the lemon vinaigrette ingredients together in a separate bowl until well combined.
Drizzle the lemon vinaigrette over the pasta salad then gently toss to combine.
Taste and season with addition salt & pepper, if needed.
