INGREDIENTS

  • THE DOUGH:
  • 1 cup warm water
  • 1 packet ( 2 1/4 tsp) active dry yeast
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 1 tsp olive oil
  • THE SAUCE:
  • 1 1/4 pounds fresh roma tomatoes, roughly chopped
  • 1/4 tsp salt
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/8 tsp crushed red pepper flakes
  • THE SAUSAGE AND TOPPINGS:
  • 8 ounces ground pork
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground fennel seed
  • 1/8 tsp crushed red pepper flakes
  • 1/8 tsp black pepper
  • 1/2 cup sliced green olives
  • 8 ounces mozzarella cheese, shredded
  • ASSEMBLY AND COOKING:
  • 1 tsp olive oil



DIRECTIONS

  1. THE DOUGH:
  2. In a large mixing bowl stir together the warm water and yeast.
  3. Stir in the flours and salt until well combined into a shaggy dough.
  4. Use your hands to knead the dough in the bowl for about 10 minutes or until the dough is smooth and elastic.
  5. Form the dough into a ball then drizzle the dough with the oil and flip around to coat.
  6. Loosely cover the bowl and set aside in a warm place to rise for 1 hour.
  7. THE SAUCE:
  8. Place the chopped tomatoes into a large saucepan over medium-high heat then cook the tomatoes, using a spatula to break up the tomatoes, until the liquid in the pan begins to boil rapidly.
  9. Reduce the heat to medium and simmer, occasionally breaking up the tomatoes, for about 5 minutes.
  10. Transfer the contents of the pan to a blender or use an immersion blender and blend well.
  11. Place a colander over a container then pour the blended tomatoes through the colander and stir the blended tomatoes to filter out any seeds and skin.
  12. Discard the seeds and skin then put the tomato sauce back into the saucepan and stir in the salt, oregano, basil, garlic, onion, and crushed red pepper until well combined.
  13. Cook the tomato sauce over medium heat, stirring often, until thickened a bit, about 5 minutes then take off the heat and set aside until ready to use.
  14. THE SAUSAGE:
  15. Mix together the ground pork and seasonings (salt, garlic, onion, fennel, crushed red pepper, black pepper) until well combined.
  16. Cook the pork mixture in a pan over medium heat, breaking up the pork as it cooks, for about 8 minutes or until browned.
  17. ASSEMBLY AND COOKING:
  18. preheat the oven to 475°F.
  19. Brush a large pizza pan or 18x13-inch baking sheet with oil.
  20. Stretch the dough to fit your pan then spread the tomato sauce evenly on top.
  21. Sprinkle the mozzarella cheese evenly on top of the sauce then sprinkle on the sausage and olives.
  22. Bake the pizza in the preheated oven for 15 to 17 minutes or until crust is lightly browned.
