Caprese Pasta Salad
Pasta salad with tomatoes, fresh mozzarella cheese, and fresh basil tossed with a white balsamic vinaigrette.

Ingredients
- 8 ounces bow tie pasta
- 1/2 cup olive oil
- 1/4 cup white balsamic vinegar
- 1/2 tsp kosher salt
- 1/4 tsp fresh cracked pepper
- 8 ounces fresh mozzarella, diced
- 1 cup grape tomatoes, sliced
- 1/2 cup fresh chopped basil
- 1 TBSP fresh chopped parsley

Directions
- Cook pasta according to package directions. Drain and rinse under cold water, set aside.
- Mix together the oil, vinegar, salt, and pepper, set aside.
- In a large mixing bowl add the pasta, mozzarella, tomatoes, basil, and parsley. Pour about HALF of the dressing over the salad and toss to combine. Add more dressing and/or salt and pepper to taste.
- Serve immediately, or refrigerate covered for up to 3 days.
