Cook pasta according to package directions. Drain and rinse under cold water, set aside.
Mix together the oil, vinegar, salt, and pepper, set aside.
In a large mixing bowl add the pasta, mozzarella, tomatoes, basil, and parsley. Pour about HALF of the dressing over the salad and toss to combine. Add more dressing and/or salt and pepper to taste.
Serve immediately, or refrigerate covered for up to 3 days.
