INGREDIENTS

  • 2 TBSP olive oil
  • 1 cup uncooked jasmine rice
  • 1 medium carrot, diced
  • 1 small yellow onion, diced
  • 1 medium garlic clove, minced
  • salt & freshly ground black pepper
  • 1 1/2 cups water



DIRECTIONS

  1. Heat the oil in a medium-size saucepan over medium-high heat.
  2. Add the rice, onion, carrot, garlic, 1/4 tsp salt, and 1/8 tsp black pepper to the pan and cook, while stirring, for about 1 minute.
  3. Pour the water into the pan and bring to a slight boil.
  4. Place a lid on the pan then reduce the heat to low.
  5. Allow the rice to simmer, WITHOUT REMOVING THE LID, for 10 minutes.
  6. Turn off the heat and allow to the rice to sit on the stove for 20 more minutes, KEEPING THE LID ON THE ENTIRE TIME.
  7. Fluff the rice with a fork then taste and season with additional salt & pepper if needed.
