Chewy Greek Yogurt Oatmeal Cookies

INGREDIENTS

2 cups rolled oats
1/2 cup whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
1 tsp ground cinnamon
1 large egg
1/4 cup whole milk plain Greek yogurt
1 TBSP raw honey
1/2 tsp pure vanilla extract
1 large ripe banana, peeled and mashed
1/2 cup raisins

DIRECTIONS

Preheat the oven to 350°F.
In a large mixing bowl stir together the rolled oats, flour, salt, baking soda, and cinnamon.
In another bowl whisk the egg with the yogurt, honey, vanilla, and mashed banana.
Stir the wet ingredients in with dry ingredients then stir in the raisins.
Scoop out the mixture into small mounds onto a baking sheet then form and press the mounds into round shapes roughly 1/4-inch thick.
Bake in the preheated oven for 15 minutes.
Remove cookies from the oven then use a spatula to transfer the cookies to a wire rack and allow to cool for about 10 minutes.
