INGREDIENTS

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1 large egg, beaten
  • 3/4 cup plain whole milk Greek yogurt
  • 1/2 cup whole milk



DIRECTIONS

  1. Preheat the oven to 400°F.
  2. Line the bottom and sides of an 8x8-inch baking dish with parchment paper.
  3. In a large mixing bowl stir together all the ingredients until well combined.
  4. Spread the batter evenly in the baking dish.
  5. Bake in the preheated oven until cooked through (a toothpick inserted in the center comes out clean) and lightly browned on top, about 22 minutes.
  6. Transfer the cornbread to a cooling rack and allow to cool for about 20 minutes.
