Generously season the chicken breasts all over with salt and pepper and set aside.
Heat the oil in a skillet over medium heat.
When the oil is hot add the chicken breasts to the pan then cover the pan and cook the chicken for 5 to 7 minutes per side or until the chicken is cooked through (165°F internal temperature).
Transfer the cooked chicken to a cutting board and allow to rest while you make the pasta.
Cook the pasta according to package directions then drain and rinse under cold water.
Place the cooked pasta into a large mixing bowl and set aside.
Add the mozzarella and tomatoes to the bowl with the pasta.
Slice the chicken into bite-size pieces then place the chicken in the bowl with the pasta, mozzarella, and tomatoes.
In a separate bowl whisk together the DRESSING ingredients (olive oil, lemon juice, Dijon, garlic, Parmesan, salt, and pepper) until well combined.
Drizzle the dressing into the bowl and toss to combine with the other ingredients.
Season the pasta salad with salt & pepper to taste then cover and refrigerate for at least 1 hour.
