Add all the ingredients except for the oil in a food processor and blend until smooth. While the food processor is still on slowly pour in the olive oil until well combined.
Refrigerate at least 1 hour to allow flavors to meld. Add salt and pepper to taste.
Goes great with tortilla chips and tacos or use as a sauce for chicken, beef, etc.
