INGREDIENTS
The Dough:
1 packet active dry yeast (1/4 ounce)
1 cup warm water
1 tsp honey
3 cups all-purpose flour
1 TBSP olive oil plus a little extra
1 tsp salt
The Toppings:
1 cup whole milk ricotta cheese
1/4 cup freshly grated Parmesan cheese
1 medium garlic clove, minced
1/4 tsp salt
1/4 tsp freshly ground black pepper
8 ounces (2 cups) low-moisture part-skim mozzarella cheese, shredded
2 TBSP freshly chopped basil

DIRECTIONS
THE DOUGH:
In a stand mixer or large bowl mix the yeast, honey and water. Let stand 5 minutes or until it begins foaming.
Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.
Use a little oil to lightly cover sides and bottom of a separate large bowl.
Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.
Form the dough in a ball and place in the oiled bowl. Cover and put in a warm place to rise for about 45 minutes.
THE TOPPINGS AND ASSEMBLY:
Preheat the oven to 450°F. Lightly oil a 16-inch pizza pan.
In a bowl mix together the ricotta, Parmesan, garlic, salt, and pepper, set aside.
Stretch or roll out your pizza dough and fit onto the oiled pizza pan.
Sprinkle the dough evenly with the mozzarella cheese.
Add tablespoon size dollops of the ricotta mixture evenly on top of the mozzarella cheese.
Bake in the preheated oven for 10 to 14 minutes or until cheese is bubbly and crust is golden brown.
Remove pizza from the oven, sprinkle with the fresh basil.
Slice and serve.
