INGREDIENTS

  • DOUGH:
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/3 cups warm water
  • 4 cups all-purpose flour
  • 1/2 tsp salt
  • 1 TBSP olive oil
  • SAUCE:
  • 2 TBSP olive oil
  • 2 pounds roma tomatoes
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes
  • salt & pepper
  • SAUSAGE:
  • 8 ounces ground pork
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground fennel seed
  • 1/4 tsp crushed red pepper flakes
  • ASSEMBLY AND BAKING:
  • 1/2 tsp olive oil
  • 3 ounces mozzarella cheese, cut in strips
  • 8 ounces mozzarella cheese, shredded



DIRECTIONS

  1. MAKE THE DOUGH:
  2. In a large mixing bowl stir together the yeast and water then stir in the flour and the salt until well combined and a dough is formed.
  3. Knead the dough by hand while in the bowl until dough is smooth and elastic, about 10 minutes.
  4. Drizzle the oil over the dough and toss to coat then loosely cover the bowl and set aside in a warm place to rise for about 1 hour.
  5. MAKE THE SAUCE:
  6. Use a sharp knife to cut a shallow X mark on the bottom (the opposite side of where the stem would be) of each tomato.
  7. Bring a large pot of water to a boil.
  8. Add the tomatoes to the boiling water and boil for 1 to 2 minutes or until the tomatoes start to peel a little.
  9. Drain the tomatoes and rinse under cold water.
  10. Peel the skin off the tomatoes and discard, the skins should peel off easily starting from where you cut an X mark.
  11. Place the peeled tomatoes back into the now empty pot then use a potato masher to mash the tomatoes.
  12. Stir the olive oil, garlic, oregano, crushed red pepper, and 1/2 tsp salt in with the tomatoes then bring to a boil over medium-high heat.
  13. Reduce heat to medium-low and simmer, occasionally stirring and breaking up the tomatoes, for about 45 minutes or until the sauce has thickened.
  14. Taste the sauce and season with additional salt & pepper if needed.
  15. MAKE THE SAUSAGE:
  16. Mix the sausage ingredients (pork, salt, oregano, garlic, onion, fennel, crushed red pepper) until well combined.
  17. Cook the sausage in a pan over medium heat, while breaking up the sausage, until browned, about 6 minutes.
  18. Transfer the sausage to a paper towel lined plate and set aside.
  19. ASSEMBLE AND BAKE THE PIZZA:
  20. Preheat the oven to 450°F.
  21. Lightly oil a large pizza pan.
  22. Stretch the dough out onto the pizza pan so its large enough to overlap the edges of the pizza pan by about 3-inches.
  23. Place the cheese strips around the edges of the pan then roll the overlapping dough over the cheese strips and lightly press the dough to seal the cheese strips in the dough.
  24. Spread the sauce evenly onto the dough then sprinkle on the shredded mozzarella followed by the cooked sausage.
  25. Bake the pizza in the preheated oven until lightly browned, 16 to 20 minutes.
