INGREDIENTS
1 pound ground pork
1 tsp paprika
1 tsp garlic powder
1/8 tsp cayenne pepper
salt & freshly ground black pepper
1 yellow onion, diced
2 TBSP olive oil
1 pound baby potatoes, thinly sliced
8 large eggs, beaten
1/2 cup shredded cheddar cheese

DIRECTIONS
In a large bowl mix together the pork, paprika, garlic, cayenne, 1/2 tsp salt, and 1/4 tsp black pepper until well combined.
Add the pork to a large cast-iron pan over medium-high heat and cook, while breaking up the pork, until well browned, about 6 minutes.
Transfer the pork to a plate and set aside leaving any fat from the pork in the pan.
Add the onion to the pan and cook, stirring occasionally, until lightly browned, about 4 minutes.
Transfer the onions to the plate with the pork and set aside.
Now heat the oil in the pan over medium-high heat.
When the oil is hot spread out the potatoes in the pan and cook until browned and crispy on both sides, about 10 minutes.
Sprinkle the potatoes with about 1/2 tsp salt then return the pork and onions to the pan and stir in with the potatoes.
Pour the beaten eggs over top and gently stir until eggs set.
Take the pan off the heat and sprinkle the cheese on top then let sit for a couple minutes to allow the cheese to melt.
