Ingredients
- 1 pound ground pork
- 1 tsp paprika
- 1 tsp garlic powder
- 1/8 tsp cayenne pepper
- salt & freshly ground black pepper
- 1 yellow onion, diced
- 2 TBSP olive oil
- 1 pound baby potatoes, thinly sliced
- 8 large eggs, beaten
- 1/2 cup shredded cheddar cheese
Directions
- In a large bowl mix together the pork, paprika, garlic, cayenne, 1/2 tsp salt, and 1/4 tsp black pepper until well combined.
- Add the pork to a large cast-iron pan over medium-high heat and cook, while breaking up the pork, until well browned, about 6 minutes.
- Transfer the pork to a plate and set aside leaving any fat from the pork in the pan.
- Add the onion to the pan and cook, stirring occasionally, until lightly browned, about 4 minutes.
- Transfer the onions to the plate with the pork and set aside.
- Now heat the oil in the pan over medium-high heat.
- When the oil is hot spread out the potatoes in the pan and cook until browned and crispy on both sides, about 10 minutes.
- Sprinkle the potatoes with about 1/2 tsp salt then return the pork and onions to the pan and stir in with the potatoes.
- Pour the beaten eggs over top and gently stir until eggs set.
- Take the pan off the heat and sprinkle the cheese on top then let sit for a couple minutes to allow the cheese to melt.
